Violet Sweet Potato Gnocchi

ingredients

  • 400 g violet Sweet Potatoes
  • 20 gram grated Parmesan
  • 1 Egg
  • 100 g Spelt Flour
  • 300 ml Tomato Sauce
  • 100 g Bacon Bits
  • 2 clove chopped Garlic
  • 100 g Sour Cream
  • Basil leaves
  • Salt
  • Pepper
  • Chili
  • Rosemary

Method

  • Step 1

    Pinch the sweet potatoes with a fork and roast them on a baking tray at 200 C for 45 minutes until soft. Let cool slightly.

  • Step 2

    Scrape the potatoes out of their skin and mash it with a fork. Now add egg, spelt flour, and parmesan cheese and knead to a not too sticky dough. Roll finger thick rolls and cut into small pieces.

  • Step 3

    I did not roll them on the traditional wooden tool for gnocchi, but I marked them with the meat tenderizer. For once they will look a bit different.

  • Step 4

    For the sauce chop the garlic and fry with the bacon bits in a deep pot. Add the tomato sauce and let simmer for 10 minutes. Add the sour cream, chopped basil leaves and mix well. Season to taste.

  • Step 5

    Meanwhile cook the gnocchi in salted boiling water until the float. Drain them and add them to the sauce. Serve immediately!
