ingredients

  • 2 tbsp Olive Oil
  • 1 chopped Onion
  • 1 portions Massaman Curry Paste
  • 700 diced Chicken Breast
  • 2 diced Potatoes
  • 2 diced Carrots
  • 1 can Coconut Cream (or Milk)
  • 3 tbsp Tamarins Sauce
  • 2 tbsp Fish Sauce
  • 1 tbsp Brown Sugar
  • 1 stick Cinnamon cut in halves
  • 3 tbsp roasted Peanuts
  • 4 Cardamom Capsules
  • 2 juice of Limes
  • few Lime leaves for decoration

Method

  • Step 1

    Steam the potatoes and carrots and set aside.

  • Step 2

    Fry the chopped onion with the curry paste in the oil, then add the meat and let it fry well. Then add half of the coconut cream, mix.

  • Step 3

    Then add the fish sauce, tamarind sauce and sugar, mix well. Now add the potatoes and carrots. Simmer briefly, then add the peanuts, cinnamon sticks, and cardamom capsules and finally the rest of the coconut cream.

  • Step 4

    Season the sauce with salt and chili. Add the lime juice and serve with lime leaves, finely chopped, with white rice.
