ingredients

  • 1 big Eggplant
  • 2 Eggs
  • 100 ml Water
  • 20 gram grated Parmesan
  • 30 gram Flour
  • 1 Pinch Salt
  • Oil for frying

Method

  • Step 1

    Peel stripes into the eggplant then slice it.

  • Step 2

    Beat together all the above ingredients for a dough.

  • Step 3

    urn over the slices of eggplants in one of those doughs and fry in hot oil.

  • Step 4

    Serve with a sprinkle of sea salt. You can do this also wit Zucchini and Capsicum!
