Italian Sausage-Potato Soup

"It’s fun to cook these soups, as you can add whatever you like most. Or you can use up leftovers, like me, I still had half a cauliflower in the fridge. Seasoning is given by the Italian sausage and the loads of chili I used!"

ingredients

  • 500 g Italian Pork Sausages
  • 50 g Bacon Bits
  • 4 cloves Garlic
  • 1 Onion
  • 1/2 Cauliflower
  • Salt
  • Pepper
  • Paprika
  • Rosemary
  • 2 tsp Chili Flakes
  • 2 1/2 liters Beef Broth
  • 800 g Potatoes
  • 1 bunch Parsley
  • 150 Spinach

Method

  • Step 1

    Chop the onion and fry it with the bacon bits in a deep pan.

  • Step 2

    Push the sausage meat out of the casings and form small balls with it, add it. Add the whole garlic cloves and fry all very well.

  • Step 3

    Cut the cauliflower into small pieces and add them.

  • Step 4

    As soon as everything is fried well, add the seasoning, and mix well. Pour the broth in and bring to a boil.

  • Step 5

    Meanwhile brush the potatoes well, then slice them with the thin mandolin directly into the broth.

  • Step 6

    Let cook for 30 minutes, add the chopped parsley and the spinach leaves and bring back to a boil. Serve hot!
