Grain Baguettes

"It’s a bread made with mixed flours and grains, relatively heavy in flavor, but it tastes great with cold meats and cheeses or grilled meats. I made 3 baguettes with the soft dough and served them at a BBQ. Actually it is a very simple bread recipe with dry yeast."

ingredients

  • 400 g strong white Bread flour
  • 300 g Rye flour
  • 200 g Spelt flour
  • 100 g mixed grains like flax seeds, sesame, sunflower
  • 2 tsp Salt
  • 11 g dried Yeast
  • 620 g warm Water, or more or less

Method

  • Step 1

    Mix the flours, grains and salt together. Add the dry yeast and mix well. Now while the food processor is running, pour in the warm water and let everything knead in the machine for about 10 minutes.

  • Step 2

    Cover the dough and let it rise in a warm place for 2 hours, folding and stretching after 60 minutes. Since the dough is sticky, I do this with the dough scraper directly in the bowl.

  • Step 3

    Tip the risen dough onto a floured surface and cut into three parts. Pull each part apart slightly, flatten a bit, and then form into an oblong roll. Twist the roll several times and place on a baking sheet. Cover and let rest for 20 minutes.

  • Step 4

    Meanwhile, preheat the oven to 250 C degrees.

  • Step 5

    Place the loaves in the oven, spray the sides of the oven with water, and turn the oven down to 230 C degrees. Bake for 10 minutes, then open the oven door to release the steam and finish the loaves at 210 C degrees for another 30 minutes.
