ingredients

  • 12 Chicken thighs
  • 3 tbsp Sake
  • 4 cloves of chopped Garlic
  • 5 cm chopped Ginger
  • 1 tbsp Oil
  • 5 tbsp red Miso
  • 2 tbsp Mirin
  • 1 tbsp Chili Oil
  • 1 tbsp Sriracha

Method

  • Step 1

    Using scissors along the cartilage at the top of the chicken thighs, cut through the meat and skin, poking the meat down to create a sort of lollipop.

  • Step 2

    Put them into a freezer bag, add the marinade and seal the bag. Now “knead” the meat so the marinade gets everywhere. Let marinate for 1 hour.

  • Step 3

    Place the oven rack over a baking sheet and place the marinated chicken legs on it. Roast in the oven at200 C degrees for 20 minutes, then turn the legs and roast again for 20 minutes. The fat will drip down into the baking tray.

  • Step 4

    Meanwhile mix the ingredients for the sauce and boil briefly to dissolve everything, then let cool slightly. Serve the roasted chicken legs with the sauce.
