ingredients

  • 1 kg Plaice Fillets
  • 4 slices Toast Bread
  • 2 Eggs
  • 1 can Anchovies in Oil
  • 30 g soft Butter
  • 1/2 bunch chopped Parsley
  • 2 cloves pressed Garlic
  • 1 Handful of Bread Crumbs
  • Salt
  • Pepper
  • some Flour
  • some Oil
  • 1 Zest Lemon
  • 1 glass White Wine

Method

  • Step 1

    Shred the toast bread and soak it in some milk.

  • Step 2

    Wash the fish and simmer gently in salted water, with the addition of the lemon zest and white wine, for 15 minutes. Drain the fish and chop it. Let it cool down a bit.

  • Step 3

    Meanwhile, mix well the soaked bread with the eggs, garlic, parsley, salt and pepper. Chop the anchovy fillets and add them. Add the chopped fish and mix everything very well. Add some breadcrumbs to make the mixture firm. (Depending on the fish) Refrigerate the mixture briefly so that it firms up a bit.

  • Step 4

    Then cut out balls with a cookie cutter and turn them in the flour. Fry the balls in hot oil until brown
