Älplermagrone Swiss traditional Comfort Food

"Älplermagrone is a typical and traditional Swiss dish from the alps. Älpler means herder, caring for the animal herds in the alps. Magronen derives from the Italian word Maccheroni, but these pasta shapes were only introduced to Switzerland in 1880 during the building of the Gotthard tunnel. The Italian workers brought this pasta with them."

ingredients

  • 500 g Big pasta shapes like Macaroni
  • 5 Potatoes
  • 200 gram chopped Ham or Bacon
  • 200 gram Swiss Cheese
  • 200 ml Cream
  • 150 ml Milk
  • 2 Onions
  • some Butter
  • Salt
  • Pepper

Method

  • Step 1

    Peel the potatoes and cut them into big chunks.

  • Step 2

    Cook them in salted water for 8 minutes, then add the pasta and cook them as long as advised on the packaging until al Dente. Drain and put into a big greased Gratin dish.

  • Step 3

    Dice the ham and chop the bacon, cook it until crisp. (I used both kinds of meat but you can use only ham or only bacon) Vegetarians just leave the meat off. Mix the meat with the pasta and potatoes.

  • Step 4

    Peel the onions, cut them in half and slice them thinly. Roast them in a little butter.

  • Step 5

    Spread them onto the pasta and potatoes and sprinkle the grated cheese all over the dish.

  • Step 6

    Mix milk and whipping cream together and season with salt and pepper. Pour it over the pasta. Bake in the oven at 200 C for 30-40 minutes. Serve hot!

  • Step 7

    This dish is often served with Apple Slices or Apple Sauce
