Recipe
- 1/ 2 tablespoon vegan butter
- 2 slices bread
- 3 tablespoons vegan feta cheese
- 2 cups fresh spinach, sautéed
- 1 avocado, sliced
- 2 tablespoons fennel seed sauerkraut
- Handful of micro beet greens
- Roasted green capsicum and coriander
Method
Step 1
Butter the outside of each slice of bread.
Step 2
Crumble vegan feta cheese onto one slice of bread. Layer the remaining ingredients.
Step 3
Heat a frying pan on medium low heat. Place the sandwich onto the pan and cook for 1-2 minutes on each side, or until golden brown. Serve.
