Spinach, ‘Feta’ and Avocado Sandwich

Serves or Makes: 1


  • 1/ 2 tablespoon vegan butter
  • 2 slices bread
  • 3 tablespoons vegan feta cheese
  • 2 cups fresh spinach, sautéed
  • 1 avocado, sliced
  • 2 tablespoons fennel seed sauerkraut
  • Handful of micro beet greens
  • Roasted green capsicum and coriander


  • Step 1

    Butter the outside of each slice of bread.

  • Step 2

    Crumble vegan feta cheese onto one slice of bread. Layer the remaining ingredients.

  • Step 3

    Heat a frying pan on medium low heat. Place the sandwich onto the pan and cook for 1-2 minutes on each side, or until golden brown. Serve.
