Breakfast is here and it's parfait, if we do say so ourselves. You can make these easy recipes ahead of time during meal prep to save time during the busy week ahead!
For the Berry Chia Pudding
- 1/ 2 cup chia seeds
- 1 cup almond milk
- 1 cup fresh coconut milk
- 1 teaspoon vanilla extract
- 1-2 tablespoons berry powder
For the Compote
- 1 cup frozen blueberries
- 1 teaspoon finely grated ginger
For the Parfaits
- 1/ 2 cup coconut yogurt
Make the chia pudding: Whisk all ingredients together in a bowl and refrigerate for 1 hour.
Make the compote: Add berries, ginger and a splash of water to a saucepan. Simmer over low heat for 15 minutes, stirring frequently.
To assemble: Divide the compote between 2 glasses. Once the chia pudding has set, divide on top of the compote. Layer with coconut yogurt and top with granola.
