Recipe

For the Berry Chia Pudding

  • 1/ 2 cup chia seeds
  • 1 cup almond milk
  • 1 cup fresh coconut milk
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons berry powder

For the Compote

  • 1 cup frozen blueberries
  • 1 teaspoon finely grated ginger

For the Parfaits

  • 1/ 2 cup coconut yogurt
  • Granola

Method

  • Step 1

    Make the chia pudding: Whisk all ingredients together in a bowl and refrigerate for 1 hour.

  • Step 2

    Make the compote: Add berries, ginger and a splash of water to a saucepan. Simmer over low heat for 15 minutes, stirring frequently.

  • Step 3

    To assemble: Divide the compote between 2 glasses. Once the chia pudding has set, divide on top of the compote. Layer with coconut yogurt and top with granola.
