RECIPE:
Mix the following in a large bowl:
1 ½ pounds of ground turkey (dark meat) *
20 basil leaves thinly sliced
3 cloves of garlic minced/crushed
1” of fresh ginger, grated
2-3 Serrano peppers (depending on your affinity for kick)
1 tbsp finely chopped cilantro
3 green onions thinly sliced
3 tsp coconut aminos
1 tsp fish sauce
Salt and Pepper
Then…
-Add @lacroixwater to the mixture 1 tablespoon at a time.
For the 1 ½ pounds of meat, 2-3 tbsp will suffice in making light but firmly textured boulettes.
-Mix in almond flour 1 tablespoon at a time as needed to balance the wet/dry ratio.
Bake, or pan fry. *Feel free to use pork.

Inspiration hit me like a ton of bricks - and this fresh, crunchy, zesty salad was born. # The salad is shaved fennel, Cara Cara orange supremes, sugar snap peas on the half shell, and finely chopped fennel fronds, cilantro, mint and chives. # The dressing is- in true Stephanie form- a little bit of this and that. It's so delicious that I'll refine it and give ya measurements tomorrow. Basics are: Dijon mustard, orange champagne vinegar, olive oil, and cara cara orange juice. ✌🏼#cookbycolor #inspired

My favorite kind of meal prep: grill all the colorful things and eat them in many delightful ways. # For the peppers: grill whole over high heat. Char the skin on each side. Contain in bowl under (plastic) wraps for 20 minutes to soften the meat of the pepper. Peel, de seed and revel in the mindlessness of it. These babies are undeniably delicious. # For the beets: wash, rub with avocado or olive oil, salt and pepper. Wrap in foil. Indirect heat ok -upper rack of grill works well while the peppers take up prime real estate. Move down once peppers are done. Put a fork in it to test for doneness. Leave some life in it! Mushy beets, no bueno! # For the pineapple: cut in spears, place on well seasoned grill. #cookbycolor #cantwaitforsummer
