ingredients
- 1/2 chorizo link, casing removed
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup heavy cream
- 1/2 cup cheddar cream
- 1/2 cup chihuahua cheese
- 1/2 cup yellow corn, canned or fresh
- 1 (10 oz) can Tomato Love Mild Diced Tomatoes + Green Chilies
Method
Step 1
In a medium pan on medium heat, fry chorizo breaking up with a spoon until browned.
Step 2
Reduce heat to low. Add minced garlic, cumin, and paprika. Toast until fragrant, about 1 minute. Season with salt and pepper.
Step 3
Add heavy cream and bring to a slow simmer, 2-3 minutes.
Step 4
Slowly add in the cheeses while stirring.
Step 5
Add corn and Tomato Love tomatoes.
Step 6
Bring to a simmer for 5 minutes. Adjust seasonings to taste. Remove from heat and serve immediately.
