ingredients
- 125 millileters water
- 125 millileters milk
- 60 grams butter
- 20 grams sugar
- Pinch of salt
- 150 grams flour
- 3 eggs

- 2 egg yolks
- 50 grams sugar
- 1 teaspoon vanilla
- 20 grams cornflour
- 250 millileters milk

Chocolate ganache
- 150 grams chocolate
- 100 millileters cream
Method
Step 1
Preheat the oven to 220 degrees C ( 440 degrees F). In a saucepan, combine water, milk, sugar and salt; bring to a simmer over a low heat.
Step 2
Add flour stir until mixture comes together into a smooth dough and pull away from the bottom of the saucepan. Transfer the dough into a bowl. Let it Cool for 10 minutes.
Step 3
Whisk eggs with vanilla. Add one a time into the pastry. Mix well after each addition. Scoop the pastry into a piping bag and pipe on prepared baking sheet.
Step 4
Reduce heat to 180 degrees C (360 degrees F). Bake until golden and fully puffed. Filled with custard. Serve!
