ingredients
- 2 cups water
- 1/4 cup Thai Iced Tea mix
- 2 cups coconut milk
- 1/2 cup sweetened condensed milk, or vegan alternative or choice, divided
- 2 tablespoons sugar
Method
Step 1
In a medium saucepan, bring the water to a low boil. Add in the Thai tea mix, and stir the tea mixture until the tea begins to dissolve.
Step 2
Remove the saucepan from heat. Using a fine strainer and a large mixing bowl, strain the undissolved tea powder out of the tea mixture. Set the tea mixture aside and allow it to cool.
Step 3
In a small saucepan, heat the coconut milk and half of sweetened condensed milk over low heat. Allow the coconut milk blend to come to a low simmer, but take care not to scorch it.
Step 4
Once the mixture is warmed through, remove the coconut mixture from heat and allow it to cool.
Step 5
Stir 1/2 cup of the coconut mixture into the strained tea mixture. Set the remaining coconut liquid aside and refrigerate.
Step 6
Next, add the remaining sweetened condensed milk and the sugar into the tea mixture. The tea mixture will turn bright orange in color with the addition of sweeteners.
Step 7
Using a popsicle mold, spoon the bright orange tea mixture into the popsicle mold, filling each individual popsicle section approximately ¾ of the way full. Do not add the popsicle sticks into the popsicle mold.
Step 8
Allow the popsicles to freeze for 1 hour.
Step 9
After one hour, remove the popsicle mold from the freezer, and fill the remaining ¼ of the popsicle mold with the chilled coconut blend.
Step 10
Insert the popsicle sticks into the popsicle mold, and freeze the popsicles overnight before releasing them from their mold. Keep frozen until ready to serve. Enjoy!
