ingredients

  • 220 gram Sugar
  • 105 gram Cocoa
  • 3 gram Salt
  • 275 gram Heavy cream
  • 75 gram Butter
  • 50 gram Corn syrup

Method

  • Step 1

    Combine cocoa, sugar, and salt. Sift of cocoa is lumpy. Set aside.

  • Step 2

    Combine heavy cream, butter, and corn syrup in pot.

  • Step 3

    Heat on low until the butter is melted

  • Step 4

    Add in dry ingredients, stirring until smooth.

  • Step 5

    Heat until 218F, stirring gently the whole time.

  • Step 6

    Pour on greased sheet and cool. Store in airtight container in refrigerator.
