Baked Pumpkin, Miso Eggplant, Red Cabbage, And Sesame Oil Salad With Wild Rice
It doesn't take long to put meals together if you're prepared. I normally make large amounts of stuff (baked pumpkin, rice, quinoa, zucchini noodles) & just keep them in air tight containers to save on prep time. Like tonight. I just mashed some baked pumpkin, added some dry fried (no oil) mushies & eggplant brushed with miso & coconut aminos, and made a quick salad with rocket & shredded red cabbage & dressed it with the left over marinade from the eggplant & a few drops of sesame oil. A bit of red rice & I'm done
