For the Dumplings:
- 40 - 50 dumpling wrappers
- 1 pound ground chicken
- 3 - 4 cups cabbage, finely chopped
- 1 tablespoon kosher salt (for the cabbage)
- 2 green onions, chopped
- 3 garlic cloves, minced
- 2 teaspoons freshly grated ginger
- 2 tablespoons soy sauce
- 2 tablespoons Shaoxing wine
- 1 tablespoon sesame oil
- 1 teaspoon granulated sugar
- 1/2 teaspoon white pepper
- 1 tablespoon chicken bouillon powder
- 1 large egg

For the Chili Oil Sauce (for 2 servings):
- 3 garlic cloves, minced
- 1 green onion, chopped
- 2 tablespoons soy sauce
- 1 tablespoon Chinese black vinegar
- 1 1/2 teaspoons Chinese chili flakes
- 1/2 teaspoon chili powder
- 2 tablespoons neutral oil (canola, vegetable, or avocado oil)
Method
Prepare the Cabbage:
Step 1
In a bowl, toss chopped cabbage with 1 tablespoon salt. Let sit for 15 minutes to draw out moisture.
Step 2
Squeeze out excess water thoroughly and set aside.
Make the Filling:
Step 1
In a large mixing bowl, combine ground chicken, drained cabbage, garlic, ginger, green onions, soy sauce, Shaoxing wine, sesame oil, sugar, white pepper, chicken bouillon powder, and egg.
Step 2
Mix until the filling becomes sticky and cohesive.
Assemble the Dumplings:
Step 1
Place about 1 tablespoon of filling in the center of each dumpling wrapper.
Step 2
Wet the edges with water, fold in half, and pleat and pinch tightly to seal.
Cook the Dumplings:
Step 1
Bring a large pot of water to a boil.
Step 2
Add dumplings and allow the water to return to a boil. Add ½ cup cold water to the pot and let it come back to a boil. Repeat this twice.
Step 3
Once dumplings float and the water boils again, they are done. Turn off heat and drain.
Make the Chili Oil Sauce:
Step 1
In a heatproof bowl, combine minced garlic, chopped green onion, soy sauce, black vinegar, chili flakes, and chili powder.
Step 2
Heat neutral oil until shimmering hot. Carefully pour over the chili mixture and stir to combine.
Serve:
Step 1
Transfer cooked dumplings to a serving dish.
Step 2
Drizzle generously with the chili oil sauce and garnish with extra green onions if desired.
Step 3
Serve immediately while hot!
