ingredients
- 3 packages of Annie's Vegan Mac and Cheese
- 5 whole carrots, cut into medium pieces
- 2 cups plant milk
- 1 tablespoon nutritional yeast, optional
- 1/2 tablespoons onion powder
- 1/2 tablespoons garlic powder
- 1 teaspoon cayenne
- 1 teaspoon smoked paprika
- sea salt, as needed
Method
Step 1
Fill a medium sauce pan with water and bring to a rolling boil. Add chopped carrots and cook until tender, about 6-8 minutes. Once tender, drain and return to saucepan.
Step 2
Add 1 1/2 cup of milk, spices and cheese packets into the pan and bring to a simmer, stir often.
Step 3
Remove from heat and allow mixture to cool slightly before blending. Add the contents of the saucepan to a blender and blend until smooth. Use the remaining plant milk to adjust to desired consistency.
Step 4
Serve in a medium large bowl with your favorite garnishes! Enjoy this delicious dip alone with your favorite veggies & chips or even your pasta.
