Another snow day, schools are closed & it’s freezing outside ❄️ A perfect scenario to make this Superfood Hot Chocolate 😋. Ingredients: 2 cups non-dairy milk of choice (coconut or almond) 2 tablespoon cocoa powder 1/4 teaspoon ground turmeric 1/2 teaspoon of ground cinnamon 1 tablespoon raw honey (or more to taste) 1 tablespoon coconut oil Instructions: 1. Add milk of choice to a medium-sized sauce pot and bring to a boil. 2. Lower to a simmer and add cacao powder and stir. 3. Add in turmeric and cinnamon and continue to stir. 4. Stir in honey until well combined. 5. Add coconut oil and whip in until all chunks are melted and mixture becomes thick. 6. Serve immediately. Enjoy! Happy hump day everyone! Making my fave tomato soup today. If you like tomatoes you will love this recipe. It’s perfect to warm up on a cold day. Ingredients: 2 tablespoons unsalted butter 1 tablespoons olive oil 1 large yellow onions diced 1/4 cup all-purpose flour 2 28-ounce cans roasted tomatoes (or 3 pounds of tomatoes, halved and roasted at 425 degrees for 30 minutes) 1-2 roasted red bell peppers 3/4 cups vegetable stock 1 tablespoon brown sugar 1/2 tablespoon kosher salt 1/2 teaspoon dried thyme 1/2 teaspoon pepper 1/2 cup heavy cream Handful fresh basil leaves Directions: 1. In a large pot, heat the butter and olive oil over medium-low heat. Add diced onions and cook gently, stirring occasionally, until soft and translucent, about 20 minutes. 2. Add flour and stir until mixture is slightly thickened and pale gold, about 3 minutes. 3. Stir in the tomatoes and their juices, red bell peppers, vegetable broth, sugar, salt, thyme and pepper. Raise heat to medium until the liquid bubbles, then reduce heat to low. 4. Simmer for 30 minutes, scraping the bottom of the pot frequently. 5. Stir in heavy cream and basil. Remove from heat and purée using a hand blender, or allow to cool until no longer steaming and purée in batches in a stand blender. Return to medium heat just until heated through. Enjoy with a toasted slice of baguette. #tomatosoup #tomatoes #tomatolove
