Chocolate banana cake

ingredients

  • 4 pieces mashed bananas
  • 1 1/2 cups all purpose flour
  • 1 cup coconut sugar
  • 1 teaspoon baking soda
  • 1 teaspoons cinnamon
  • 2 1/3 cups plant milk
  • 1 cup vegetable oil
  • 1 teaspoons baking powder
  • 5 cubes dark chocolate
  • 1/3 cup peanut butter
  • 1 tablespoons maple syrup
  • 2 tablespoons vanilla powder
  • 1/2 cup coconut chips

Method

  • Step 1

    Preheat your oven to gas mark no.4. or 180°C or 350°F. Add all ingredients into one bowl, starting with mashed bananas. Do not overmix, a few lumps are ok.

  • Step 2

    Transfer the mix into a loaf pan sprayed with non-stick oil. Bake for 35 minutes depending on your oven.

  • Step 3

    In the meantime, prepare your chocolate sauce. Melt over a double boiler peanut butter, chocolate, coconut oil, and maple syrup. It will thicken up as it cools down, just in time to cover your cake.
