Not only are they delicious, but they're also packed with protein and only sweetened with bananas. ingredients

  • 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water)
  • 2 very ripe bananas
  • 1 1/4 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons extra virgin olive oil
  • 1 cup all-purpose flour
  • 1/2 cup protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3-1/2 cup mini chocolate chips

Method

  • Step 1

    Make flax egg by combining the ground flaxseed and water in a large bowl. Set aside for 5 minutes to thicken.

  • Step 2

    Heat waffle iron. Add bananas to the bowl with the flaxseed and mash until smooth.

  • Step 3

    Add the almond milk, vinegar, vanilla, and olive oil. Whisk until well combined. Add the flour, protein powder, baking soda, baking powder, and salt.

  • Step 4

    Mix with a spatula until just combined. Fold in chocolate chips. Cook according to waffle iron’s directions. Enjoy with some pure maple syrup!
