ingredients

  • 1 cup gluten-free oat flour
  • 2 tablespoons coconut flour
  • 1/2 cup all-purpose flour
  • 75 grams melted vegan butter
  • 100 grams coconut sugar
  • 1 teaspoon cocoons jam, optional
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon cacao powder
  • 1 tablespoon roughly chopped hazelnuts
  • 4 tablespoons oat milk
  • 6 oz dark chocolate, roughly chopped
  • sea salt, to taste

Method

  • Step 1

    Preheat oven to 375 degrees and line a baking tray with a sheet of parchment paper.

  • Step 2

    Combine flours, sugar, baking soda, baking powder, and cacao powder to a mixing bowl and stir to combine.

  • Step 3

    Add the melted vegan butter, vanilla extract, and oat milk. Mix well.

  • Step 4

    Mix in the chocolate and hazelnuts until the batter is even.

  • Step 5

    Form the cookie dough into balls, and place 2 inches apart from one another on the baking tray.

  • Step 6

    Bake for 15-20 minutes, or until golden brown.

  • Step 7

    Sprinkle with sea salt and let cool before serving.
