ingredients

  • 2 cups lentil pasta
  • 1/2 bag spinach
  • 1 pack cherry tomatoes
  • 4 fillets trout
  • 2 blocks feta
  • 1 Handful chopped chives
  • 1 Handful fresh parsley
  • 1 tablespoon extra virgin olive oil

Method

  • Step 1

    In a large oven dish, place the blocks of feta in the middle and then add tomatoes, spinach and diced trout. Toss with olive oil and season with oregano. Bake in the oven for 40 mins, until tomatoes are softening and feta is golden.

  • Step 2

    Meanwhile in a pot of water, cook the pasta.

  • Step 3

    Remove the baking dish from the oven, and using a fork or back of a wooden spoon mix together the tomatoes, oil, spinach and feta together to a sauce consistency. Add in the boiled pasta and consistently mix together.Top with chives and parsley.
