Here's a "goodbye-summer" parfait from last week using the final remainders of the summer fruits I had in the fridge. I added a layer of yogurt to the bottom of the jar, topped it with apricots and blueberries, yogurt, matcha chia pudding, more yogurt and finally some beautiful red currants and fig slices. Can't get enough of this yummy breakfast combo. On another note, sending big thanks to @thefeedfeed and @vitamix for featuring my salted brownie cheesecake bites on their feed??

Recipe

Matcha Chia Pudding Parfait


Matcha chia pudding:


2 Tbsp. chia seeds


1/2 cup of water


1/2 tsp of matcha powder


Mix all ingredient together a few times and let it sit for 10-15 minutes to gel. You can add your favorite natural sweetener, but keep in mind that even natural sweeteners should be consumed in moderation.


Layer with apricots and blueberries & yogurt. Enjoy!
