"🍊Vegan orange-apricot cardamom scones🍊I made these for a late brunch yesterday and they were to die for!! so buttery, so flaky, and so fresh, warm, and full of flavor - the perfect treat for brunch or tea time :) Also, i’m thinking of starting a new series called “Sunday Scones” where I make a new flavor of scones every Sunday, what do y’all think?"

ingredients

  • zest of one blood orange
  • 1/3 cup white sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • pinch of salt
  • 1/2 cup vegan butter
  • 1 flax egg
  • 1/2 cup chopped apricots
  • 1 tablespoon vanilla extract
  • 2/3 cup dairy-free yogurt
  • 2 tablespoons cinnamon sugar
  • 1/2 tablespoon ground cinnamon
  • 2 teaspoons ground cardamom

Method

  • Step 1

    In a bowl whisk together the zest and sugar for about a minute.

  • Step 2

    Add the flour, baking powder, and salt into the mixture and mix.

  • Step 3

    Add the vegan butter into the mixture and use your hands or a pastry cutter to cut the dough until crumbly.

  • Step 4

    Fold the apricots, ground cinnamon and ground cardamom into the mix.

  • Step 5

    In a separate bowl whisk the flax egg, dairy free yogurt, and vanilla extract.

  • Step 6

    Add the egg/yogurt mix into the other bowl and very gently fold the ingredients into each other until a very loose dough comes together.

  • Step 7

    On a floured surface, gently fold the dough over itself a couple times and shape into a circle.

  • Step 8

    Add the dough circle into a greased pan, cut the scone markings, top with cinnamon sugar and pop into the oven at 350 F for 30-35 minutes.

  • Step 9

    Top with more zest and cinnamon sugar!
