  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pumpkin puree
  • 3/4 cup light brown sugar (or coconut sugar)
  • 1/2 cup + 1 teaspoon melted coconut oil (or vegan butter), divided
  • 1/4 cup pure maple syrup
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and set aside for 5 minutes)
  • 1 teaspoon vanilla extract
  • 1 1/3 cup semisweet chocolate chips, divided

Method

  • Step 1

    Preheat the oven to 350°F. Line an 8x8-inch square baking dish with parchment paper, ensuring an overhang on the edges.

  • Step 2

    In a medium bowl, whisk together the flour, cinnamon, ginger, nutmeg, baking powder, baking soda, and salt.

  • Step 3

    In a separate large bowl, combine the pumpkin puree, sugar, 1/2 cup melted coconut oil or butter, maple syrup, flax egg, and vanilla. Mix until well combined.

  • Step 4

    Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Gently fold in the 1 cup of chocolate chips.

    Spread the batter evenly into the prepared pan. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

    Allow the bars to cool in the pan for 10 minutes. Then, using the parchment paper overhang, transfer the bars to a wire rack to finish cooling.

    Combine the remaining 1/3 cup of chocolate chips with the remaining 1 teaspoon of coconut oil and melt together.

    Once the bars are completely cooled, drizzle the melted chocolate over the top. Allow the chocolate to set. Slice into bars and enjoy.
