ingredients
- 10.5 ounces firm or extra firm tofu, drained
- 3/4 cup flour of your choice (whole wheat recommended)
- 1/2 cup water, plus more as needed
- Pinch of kosher salt
Method
Step 1
In a blender, combine tofu, flour, 1/2 cup water, and a pinch of salt.
Step 2
Blend until smooth. The mixture should be thick but spreadable—add more water if needed.
Step 3
Heat a non-stick pan over medium heat and lightly spray with cooking spray if necessary.
Step 4
Scoop about 1/3 cup of the batter into the pan and spread it evenly to the edges.
Step 5
Cook for 3-4 minutes until the bottom is golden and firm. Flip and cook for another minute until cooked through.
Step 6
Store tortillas at room temperature for up to 3 days or in the refrigerator for up to a week.
Step 7
Reheat in a dry pan or microwave before serving.
