- 1 tablespoon olive oil
- 1 (28 ounce) can Muir Glen Chili Starter (Medium with Jalapeños)
- 2 cups beef broth
- 1 small onion, finely chopped
- 1 red, green, or yellow bell pepper, cut into small ½-inch pieces
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 1/2 tablespoons chili powder
- 3/4 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/8 teaspoon cayenne pepper
- 12 ounces 85% lean ground beef
- 3/4 cup canned kidney or pinto beans, drained and rinsed
- Shredded cheddar cheese, for serving
- Sour cream, for serving
- Chopped green onions, for serving
Method
Step 1
In a pot or Dutch oven, heat olive oil over medium heat.
Step 2
Dice the onion, garlic, and bell pepper. Once the pot is hot, add the vegetables and cook until fragrant, about 3 to 5 minutes.

Season with ground cumin, chili powder, ground coriander, red pepper flakes, dried oregano, salt, pepper, and cayenne pepper. Mix well to combine.

Add the ground beef to the pot, breaking it apart into smaller pieces. Cook until browned, about 7-9 minutes.
Step 5
Stir in the Muir Glen Chili Starter, rinsed beans, and beef broth.
Step 6
Cover the pot, reduce heat to medium-low, and let it simmer for 45 minutes.
Step 7
Reduce heat to low, remove the lid, and serve hot. Top with optional toppings like shredded cheddar cheese, sour cream, and chopped green onions. Enjoy!
