Smashed Berry & Balsamic Kale Grilled Cheesefrom @noshandnourish's first cookbook, Superfoods at Every Meal
2 teaspoons coconut oil 1 cup finely diced, de-stemmed kale 2 teaspoons balsamic vinegar 2 teaspoons basil paste or 10 fresh basil leaves 1 cup organic blueberries ½ cup organic blackberries 12 ounces fontina cheese, sliced 8 slices sourdough bread
Preheat the oven to 375°F. In a medium-sized skillet over medium heat, melt the coconut oil. Add the kale and sauté for approximately 5 minutes, until softened, and then add the balsamic vinegar and basil paste and stir to combine. Remove from the heat.
Smash the berries in a medium-size bowl. (I use the bottom of a cup to smash mine.)
For each sandwich, place a slice of sourdough bread, a layer of the kale mixture, a layer of sliced fontina cheese, and a layer of smashed berries, and then top with the second slice of bread. Set the sandwiches on a cookie sheet and bake in the oven for 10 minutes, or until the cheese is thoroughly melted. Serve hot.
