Sour Orange Mojo Meringue Pie
A song of the south. Made with sour orange juice and zest, lime juice and zest, and chili flakes. Followed @thejudylab's lead and looked up the pate brisee recipe with vodka on @food52 - no shrinkage!<br><br>RECIPE:<br><br> The pie serves 8. <br> Crust recipe is @food52: Cook's Illustrated Foolproof Pie Crust, Swiss meringue recipe is @marthastewart and the curd was from an old recipe I adapted from Elm Street Magazine by Carolyn Gall. Elm Street no longer exists, so here it is:<br> 11/4 cups granulated sugar<br> 11/2 cups water<br> 1tbsp finely grated sour orange zest<br> Finely grated zest of one large Persian lime<br> Pinch chilli flakes<br> 1/2 cup mixed sour orange and lime juices (juice of 2 limes, the rest sour orange)<br> 1/3 cup cornstarch<br> 4 egg yolks<br> 2 tbsp butter<br> <br> This is a fairly stable recipe, so doesn't need to be cooked in a double boiler. Just whisk all the ingredients together in a saucepan over medium heat. Whisk continuously until mixture thickens, then comes to a boil. Take off heat and whisk in butter until fully incorporated.
