Raw Lime Mini Cheesecakes
I have a serious raw dessert addiction. I made these today before I'd even given a thought to what to feed my kids for dinne. These are so yummy and creamy, with a lovely tang from the lime juice. They may not last the night...To make the base, grind 1/2 cup almonds and 1/4 cup shredded coconut in a blender until it's a coarse powder. Transfer to food processor and process with 1/2 cup medjool dates and pinch of salt until the dough sticks together. Press into 12-14 mini muffin cups. To make filling, blend 1 cup soaked cashews, 1/2 cup chopped avocado (about half an avo), 1/4 cup lime juice (about 3 large limes), 1/4 cup agave, 1/4-1/3 cup water (as needed) and 4 tbsp melted coconut oil until smooth. Pour onto bases and freeze for about 2 hours. Enjoy!
