ingredients
- 500 grams Mixed Berries, defrosted
- 250 grams Raspberries, defrosted
- 300 milliliters Thickened Cream,
- 250 grams Quark,
- 250 grams Mascarpone,
- 1/4 cup Raw Sugar,
Method
Step 1
In a large bowl, whisk the cream until large peaks are formed (until it is completely whipped). Be careful not to over whisk as this may cause the cream to curdle.
Step 2
Combine the quark and the mascarpone in another large bowl. Fold the whipped cream into the quark mixture.
Step 3
Add the defrosted mixed berries and raspberries into a large bowl or 5 small dessert glasses
Step 4
Spoon the cream quark mixture on to the top of the berries. Sprinkle with raw sugar, be generous here.
Step 5
Place into the fridge for a minimum of 2 hours and if time permits, up to 24 hours. You want the sugar to dissolve into quark mixture and create a liquid, sugary layer.
Step 6
Once ready, serve and enjoy!
