ingredients
- 3 ripe bananas
- 75 ml sunflower oil
- 50 grams brown sugar
- 30 ml maple syrup
- 200 grams self-raising flour
- 50 grams oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 50 grams chocolate chips
Method
Step 1
Preheat the oven to 180c, and pop 9 muffin cases into a muffin tin.
Step 2
Mash the bananas well with a fork, and add to a bowl along with the sunflower oil, brown sugar and maple syrup. Give everything a good mix.
Step 3
Add the self-raising flour to the bowl, and fold it in so that it combines with the rest of the ingredients.
Step 4
Add the oats, baking powder, cinnamon and chocolate chips to the bowl and fold everything together. Don’t over mix the batter, just gently fold until everything is combined.
Step 5
Pour the batter into the muffin cases, until each one is 3/4 full. You may have enough batter for a couple more muffins.
Step 6
Bake for 25 minutes, or until the tops are turning golden brown.
