Chocolate Cups
- 1 cup dark chocolate chips
- 1 teaspoon refined coconut oil

- 1/2 cup creamy peanut butter
- 1 tablespoon coconut flour
- 1/4 teaspoon pumpkin pie spice
- 1/2 tablespoon coffee grounds
- 1/2 tablespoon maple syrup
- Pinch of salt
Method
Step 1
Line a mini muffin tin with 12 mini muffin paper liners.
Step 2
Melt the chocolate and coconut oil in 30 second increments in the microwave (stirring each time), until fully melted (about 1 minute total).
Step 3
Spoon a layer of melted chocolate mixture into each liner, and freeze for for 10-15 minutes.
Step 4
In a bowl, combine peanut butter, coconut flour/protein powder, pumpkin pie spice, coffee grounds, salt & maple syrup to form a dough-like mixture.
Step 5
Form into 12 mini disc shapes. Remove muffin tin from the freezer.
Step 6
Place peanut butter discs on top of the bottom chocolate layer and spoon additional chocolate mixture over peanut butter layer.
Step 7
Sprinkle extra coffee grounds on top and palce muffin tin in the freezer for at least one hour, or until fully hardened. Once hardened, remove from the freezer & enjoy!
