ingredients
- 120 grams whole buckwheat flour
- 70 grams oats
- 25 grams desiccated coconut (unsweetened)
- 80 grams cashews, chopped
- 50 grams coconut oil
- 50 grams agave syrup
- 1 teaspoon cinnamon
- 1 1/4 teaspoon ginger
- 1 1/4 teaspoon cardamom
- 1 teaspoon vanilla powder
Method
Step 1
Melt the coconut oil on low heat until completely melted
Step 2
Mix the spices together in a small bowl Chop the cashews roughly, so you have larger pieces for more crunch.
Step 3
Mix everything together including the warm coconut oil until well mixed and incorporated. Spread the granola onto a baking tray lined with a silpat or baking paper and bake at 160°C for about 20-25 minutes. The cashews will be golden brown when it’s ready. (Make sure it doesn’t get too dark as this will make it taste too bitter)
Step 4
Let it cool down completely and store in an airtight container.
