*Tip: you can use any chocolate you like, but I prefer one with with 55-60 percent cocoa content, which will provide a good balance of flavor.

ingredients
- Cooking spray or oil, for pan
- 6 ounces dark chocolate, chopped*
- 6 tablespoons unsalted butter, cut into pieces
- 1/2 teaspoon fine sea salt
- 2/3 cup coconut sugar (or regular granulated sugar)
- 1 teaspoon vanilla extract
- 1 1/4 cups almond flour
- 2 tablespoons arrowroot flour (or cornstarch)
- 2 large eggs
Method
Step 1
Preheat the oven to 325˚F (160˚C). Spritz an 8-inch square pan with cooking spray or rub it with oil. Line the pan crosswise with a piece of parchment paper, leaving an overhang (this will make it easy to remove the brownies once they’re baked).
Step 2
Melt the chocolate and butter in a stainless steel or glass bowl set over a pot of barely simmering water (the bottom of the bowl shouldn’t touch the water). One the mixture is silky smooth and warm, remove the bowl from the heat. Stir in the salt, coconut sugar and vanilla extract. Let the chocolate cool until it’s lukewarm.
Step 3
In a bowl, whisk together the almond flour and arrowroot flour.
Step 4
Whisk the eggs into the chocolate, one at a time. Add the almond flour mixture and stir until well combined; the batter will be quite thick (there’s no need to be gentle here—stir with oomph).
Step 5
Scrape the batter into the prepared pan and spread it in an even layer. Bake the brownies until the the top is dry to the touch and a toothpick inserted in the center comes out with a few moist crumbs, about 23-25 minutes (they might bubble up as they cook, but will shrink back down as they cool).
Step 6
Cool the brownies in a the pan set on a rack. Using the parchment as handles, transfer the brownies to a cutting board. Cut them into squares (they’re quite rich, so I usually cut them into 16 squares, but you do you!). Devour with pleasure.
