ingredients

  • 3/4 ounces vegan butter, melted
  • 1/3 cup granulated sugar
  • 1 pound cherries, pitted
  • 3/4 cup all purpose flour
  • 2 tablespoons tapioca flour
  • 1 teaspoon baking powder
  • 3 tablespoons almond meal
  • 1 teaspoon flax meal
  • 1 pinch of salt
  • 11 ounce pack organic silken tofu
  • 1/2 cup unsweetened almond
  • zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1 tablespoon confectioners’ sugar, sifted

Method

  • Step 1

    Heat the oven to 350°F. Grease a 10 inch round pie dish with vegan butter and sprinkle the base with 1 tablespoon of the sugar. Arrange the cherries in the dish in a single layer. Set aside

  • Step 2

    In a blender, mix together melted butter, sugar, the all purpose flour, tapioca flour, almond meal, baking powder, salt, flax meal, silken tofu, almond or oat milk, lemon zest, and vanilla until smooth.

  • Step 3

    Pour the batter over the cherries and bake for about 1 hour – the clafoutis should be golden on top and just set. Serve warm, dusted with confectioners sugar.
