ingredients
- 2 cups All purpose flour
- 1 1/2 Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon salt
- 1/3 cup sugar
- 2 cups oat or soy milk
- Juice from one lemon
- 2 tablespoons Flax meal
- 3 tablespoons vegan ricotta
- vanilla extract
- Zest from one lemon
- 1/4 cup vegan butter melted
- 3/4 cup organic Blueberries
Method
Step 1
Mix the dry and wet pancake ingredients together. Set aside for 5 min. Melt some vegan butter or coconut oil in the pan over a medium heat.
Step 2
Add the batter with some blueberries. Cook covered for few min then flip. Repeat with the rest of the batter. Enjoy with some maple syrup and fresh blueberries.
