Garlic confit is garlic cloves cooked slowly in oil until they become tender and flavorful. It's a great addition to dishes like pasta, soups, and meats. The oil infused with garlic can also be used for cooking. Garlic confit can be stored in the fridge and adds depth of flavor to your cooking.

ingredients
- 1 1/2 cups extra virgin olive oil
- 3 springs of fresh thyme
- 1-2 small whole chilies optional
- 1 teaspoon red chili flakes or use 6 whole peppercorns
- 1 teaspoon kosher salt
Method
Step 1
Preheat oven at 300F. Place garlic cloves into an oven safe baking dish.
Step 2
Pour the olive oil on top. Garlic should be submerged in oil. Bake the garlic covered for about 45 min or until the cloves soft and golden.
Step 3
Let the garlic confit cool completely. Then transfer the entire thing into a glass jar. You can also use the oil from the garlic confit to flavor veggies, rice and so much more.
