Vegan Peppermint Chocolate Sugar Cookies


Flax Egg: 2 tbsp flax with 3 tbsp water

1/2 cup vegan butter

1/3 cup caster sugar

2 tsp vanilla extract

pinch of salt

3 generous drops of peppermint extract

1/3 cup cocoa powder

3 tbsp cornflour

1 1/4 cups plain flour


Preheat oven to 180 degree C

Prepare a flax egg by mixing 2 tbsp flax with 3 tbsp water and leave to the side to thicken

Cream together vegan butter and caster sugar until pale and light. Add the vanilla extract, pinch of salt and peppermint extract and flax egg.

In a separate bowl, whisk together cocoa powder, cornflour and plain flour. Add the dry flour mix to the butter mix Roll out between two sheets of grease proof paper to the thickness of just over a pound coin. Cut out the stars and place on a lined baking tray and pop in the oven for 10 mins. If you want to put string through them to hang on your tree, punch out the holes IMMEDIATELY after they come out the oven, or they'll snap (I used the tip of a circular icing nozzle!)
