ingredients
Cabbage:
- 2 Hispi cabbages (or regular cabbages, cut into wedges), halved
- 1 small bunch coriander, chopped
- Sesame seeds, for topping
- Olive oil, for topping

Marinade:
- 2 heaping tablespoons miso paste
- 1 tablespoon sesame oil
- 2 tablespoons rice vinegar
- Chilli oil or chilli flakes or fresh chopped chilli, adjust to taste

Beans:
- 1 can butter beans, drained and rinsed
- Runny tahini, to taste
- Juice of 2 limes
- Salt, to taste
- Olive oil, to taste
- 1 tablespoon ground ginger
Method
Step 1
Mix all marinade ingredients in a bowl, taste to make any adjustments.
Step 2
For the bean purée, blitz all purée ingredients with a splash of water, taste to make any adjustments.
Step 3
Heat a little olive oil in a frying pan over medium to high heat. Once hot, char the cabbages on each side until golden.
Step 4
Drizzle the marinade over the charred cabbages, allowing it to become sticky and caramelized.
Step 5
To serve, spread the bean purée on a platter and top with the charred cabbages, sesame seeds, chopped coriander, additional chilli (if desired), and a squeeze of lime.
