Sweet Potato Muffins
I can't help feeling my IG feed is turning very orange. Today I am stocking up on breakfast for the next few days with these delicious sweet potato and chili muffins as per the request from my husband this morning! I've never been a huge fan of savory muffins but these are simply delicious. I've adapted the recipe from @jamieoliver and his #everydaysuperfood cookbook. Today I made the most wonderful quiche filled with softened leeks, asparagus spears and crumbled feta. The quiche is made even better by being gluten free with a crust made of oats and sunflower seeds. Made in around an hour, this is perfect with salad for dinner or wrapped up and packed in your lunchbox!

Creamy Hummus
I've been on a mission to get smooth and creamy hummus for a while now. Blending tinned chickpeas with ice cold water and peeling each individual chickpea of its outer casing (so laborious) were two of my many attempts at achieving the perfect hummus but it always came out grainy - until now. The problem was in the method, in order to get the creamiest hummus, you need to soak your chickpeas overnight and then (over)cook them with baking soda. To my soft chickpeas, I added two garlic cloves, half a cup of tahini, salt, the juice of two lemons and half a teaspoon of ground cumin. The result A creamy, smooth and earthy dip. Although I've topped my hummus with a little extra virgin olive oil and paprika, there is absolutely no oil in the hummus itself so dip away with no guilt at all! #hummus #vegan #mylittlehongkongkitchen

Roasted Rainbow Carrots With Mint And Parsley Pesto Topped With Pistachios…
I couldn't resist buying these pretty rainbow carrots when I saw them yesterday. I halved them and seasoned liberally with salt, pepper and good olive oil. I served these with a pomegranate-jeweled herby couscous, chopped pistachios and feta! Topped with a little natural yoghurt and a herb pesto, this us undoubtedly the perfect winter salad!
