  • 1 cup (200 grams) granulated sugar
  • Zest of 2 lemons
  • 1/2 cup (115 grams) melted unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1/2 cup (100 grams) plain yogurt or sour cream
  • 1 tablespoon whole milk
  • 1 1/2 ups (180 grams) all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons baking powder

  • 1/2 cup (100 grams) granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons water (Mix and microwave for 40 seconds, or until sugar dissolves)

Lemon Glaze:

  • 1/2 cup (65 grams) powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon whole milk (Whisk until smooth)

Method

  • Step 1

    In a mixing bowl, rub the lemon zest into the sugar with your hands until fragrant and well combined.

  • Step 2

    Whisk in melted butter, eggs, vanilla, lemon juice, yogurt (or sour cream), and milk until smooth.

  • Step 3

    Add flour, baking powder, and salt. Gently mix just until no dry streaks remain—do not overmix.

  • Step 4

    Pour batter into a greased and lined 8x4 or 9x5 loaf pan.

  • Step 5

    Bake at 350°F for 37–40 minutes (8x4) or 33–35 minutes (9x5), or until a toothpick comes out clean.

    While the loaf is still warm and in the pan, pour the lemon syrup evenly over the top.

    Let cool completely, then drizzle with glaze.
