ingredients
- Gluten free breadcrumbs
- 1 stick plus 5 tablespoons margarine
- 1/2 cup plus 2 tablespoons cane sugar, plus more for sprinkling
- 1 1/4 cups gluten free all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon xantham gum
- 6 tablespoons plus 2 teaspoons applesauce
- 3 tablespoons plus 1 teaspoon plain unsweetened soy yogurt
- 1 teaspoon bourbon vanilla powder
- 3-4 apples, thinly sliced
- Cinnamon, for sprinkling
- Sliced almonds, for garnish
Method
Step 1
Preheat the oven to 400ºF. Grease an 8-inch springform pan and coat lightly with breadcrumbs.
Step 2
In the bowl of a stand mixer, cream together the margarine and sugar. In a separate bowl, whisk together the flour, baking powder and xantham gum. Add the flour to the creamed margarine, mixing until just combined. Add the applesauce, yogurt and vanilla. Mix to incorporate.
Step 3
Press the dough into the prepared pan. Arrange the apple slices in concentric circles on the dough. Sprinkle with sugar and cinnamon.
Step 4
Bake for about 45 minutes, or until golden brown. Let cool and garnish with sliced almonds.
