ingredients
- 150 gram Butter
- 240 gram Flour
- 2 tbsp Olive oil
- 3 tbsp Cold water
- 1 Tomato
- 12 Cherry tomatoes
- 150 gram Ricotta
- Shredded parmesan
- Salt & pepper to taste
- Dried thyme, oregano, basil and rosemary
- Balsamic glaze (optional)
Method
Step 1
Cut butter into small pieces
Step 2
Sift the flour. Grind with salt, butter and olive oil until fine crumbs form
Step 3
Add iced water a tablespoon at a time and knead the dough until it comes together into a ball. Wrap in a plastic wrap and leave in the freezer for 30 min
Step 4
Cut tomato into slices and cherry tomatoes into halves
Step 5
Take out the dough and roll it into a layer. Carefully transfer to the pan so that the edges hang out
Step 6
Spread the ricotta into an even layer and sprinkle with Parmesan cheese. Place sliced tomato on top first and then cherry tomatoes on top. Season with salt, pepper and the rest of spices
Step 7
Bake at 400 degrees for 40 min. Top with balsamic glaze is you want. Enjoy!
