ingredients
- 2 cups rolled oats (gluten-free optional)
- 2 tablespoons coconut oil or olive oil
- 2 tablespoons honey, agave, or date syrup
- 1/2 cup nut butter (such as almond, peanut, or cashew)
- 1 cup (200 grams) 70% dark chocolate
Method
Step 1
Preheat the oven to 350°F. Line a baking tray with parchment paper.
Step 2
In a saucepan over low heat, melt the coconut oil. Once melted, remove from heat and stir in your choice of sweetener (honey, agave, or date syrup) and nut butter until well combined.
Step 3
Add the rolled oats to the mixture and stir until they are evenly coated.
Step 4
Spread the mixture onto the prepared baking tray, ensuring it's evenly distributed and packed down firmly. You might use the back of a spoon or spatula to press it down.

Bake for about 15-20 minutes until the edges turn slightly golden. Remove from the oven and let it cool completely.

Once cooled, spread an extra layer of nut butter on top of the granola base.

Melt the dark chocolate in a heatproof bowl placed over a saucepan of simmering water (double boiler method) or in short bursts in the microwave, stirring regularly until smooth.

Pour the melted chocolate over the nut butter layer, spreading it out evenly with a spoon or spatula.

Place the baking tray in the refrigerator and allow it to set for at least 1-2 hours.

Once the bark is solid, remove it from the tray and parchment paper, then break it into smaller pieces. Store the granola bark in an airtight container in the refrigerator.
