ingredients

  • 3 cups mixed greens
  • 1 Handful amaranth
  • 3 tablespoon fresh mint
  • 1 whole blood orange
  • 1/4 cup red onion

Method

  • Step 1

    Soak the bulgur wheat an hour before cooking it. Drain. For this salad, I like to use 1/2 cup dried bulgur.

  • Step 2

    Stir in bulgur and chopped mint. Chill two hours.

  • Step 3

    Arrange 3 cups of mixed greens in a bowl and spoon bulgur over the greens. Toss in segmented blood orange, red onions, and top with mustard and amaranth greens. Garnish with orange nasturtiums or marigold petals. Use your favorite dressing
