ingredients

  • 1 3/4 cup cane sugar
  • 1/3 cup corn syrup or agave
  • 1/2 cup water
  • 1/2 cup water for gelatin
  • 1 1/2 teaspoon rosewater
  • 1 salt
  • 1/2 teaspoon beet powder or red food coloring
  • 1 cup powdered sugar
  • 1/2 cup arrowroot powder
  • 1 cup fresh raspberries
  • 1 box graham crackers
  • 20 squares Ghiradelli Raspberry Chocoalte

Method

  • Step 1

    Put the sugar and corn syrup in a pot and stir until dissolved well. Heat on medium until the syrup starts to boil.

  • Step 2

    Cover the pot with a lid and lower the heat to simmer, let the mixture cook for 2-3 minutes. Make sure no sugar crystals appear. If they do, put the lid back on and cook another 30 seconds to a minute.

  • Step 3

    Check the temperature with your candy thermometer. It should read between 242-246. Cook until it reaches this temperature range.

  • Step 4

    Meanwhile, prep the gelatin. Empty the packets in a bowl and pour the the water over it. Let sit for about ten minutes.

  • Step 5

    Use an electric hand mixer beat the gelatin mixture. Remove the syrup from the heat once it’s reached the temperature. Add in the syrup slowly. Add a pinch of salt. Increase the speed and beat on high for 3 minutes. Mix until fluffy. Add in your rosewater at the end of this process and beet powder to color them pink. Red food coloring is fine too in small amounts.

  • Step 6

    Grease a baking dish- 8 x8 works well. Pour the fluffy mixture into the dish and spread it evenly across. Combine the arrowroot powder and powdered sugar and dust over the top of the marshmallows. Allow to rest for six to seven hours.

  • Step 7

    Use a knife to cut the marshmallows and additional dusting powder to cover each side of the marshmallows.

  • Step 8

    For a double decker s’more use two Ghirardelli Raspberry Chocolate squares and three graham crackers. Roast marshmallows in a fire pit, and smash it all together with fresh raspberries for even more texture! Enjoy!
