ingredients

  • 1/2 cup coconut oil
  • 1/4 cup fresh ginger, grated
  • 3 cups gluten free oats
  • 1 cup crushed pecans
  • 1/2 cup raw sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1 cup shredded coconut
  • 2/3 cup maple syrup
  • 1 teaspoon vanilla
  • 2 tablespoons pumpkin spice
  • 2 teaspoons cinnamon
  • 1 teaspoon cardamom
  • 1/2 teaspoon salt

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a sauce pan, heat coconut oil and ginger on low, stirring slowly.

  • Step 3

    In a food processor, grind pecans for a few seconds.

  • Step 4

    In a large bowl, combine oats, nuts and spices. Pour the coconut oil and ginger. Add maple syrup to your liking. If it’s too dry, add more coconut oil and/or maple.

  • Step 5

    Spread onto cookie sheet and bake 30 minutes. Every 10 minutes pull it out and toss, and re- spread. Remove from the oven and allow to cool completely.
