ingredients

  • 2/3 cup sugar
  • 1 1/2 cups flour
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 salt
  • 2 whole eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch ground cloves

Method

  • Step 1

    Preheat the oven to 350 degrees. Cream the sugar, oil, and eggs until smooth. I use an electric hand mixer but you can whisk as well.

  • Step 2

    Add all other ingredients with a rubber spatula. Don’t overmix.

  • Step 3

    Line a loaf pan with parchment paper. Pour in the batter and bake for 45 - 50 minutes or until a toothpick comes out clean!
